Malpua
Prepare batter and set aside for some time until sugar syrup is ready
1 ¼ cup maida (all purpose flour); ½ teaspoon elaichi, 1 teaspoon saunf, 1 ½ cup milk, 2 -4 tablespoons ghee (for frying), 3 tablespoons milk powder or mawa/soft khoya
For syrup : ½ cup sugar, ¼ cup water, 2 teaspoons limejuice
Pour milk into a mixing bowl, add the milk powder, mix well
Add flour, fennel – saunf, elaichi powder
Make a batter mixing well all these ingredients
Use more milk if needed so that the batter is of flowing consistency not too thick or too watery
Batter may be kept aside for atleast 4 hours to get nice fluffy malpuas
Prepare the sugar syrup – add sugar and water to a pot, boil on medium flame to get 1 string consistency
Heat ghee, pour 2-3 tablespoons of the batter in the hot ghee
The batter spreads itself depending on the consistency
Allow to fry until golden. Flip and fry on the other side as well
Remove from the pan and directly add to the sugar syrup; allow to soak in syrup for atleast 10 minutes, then remove them to a serving plate
Garnish with dryfruits ,nuts , pista ; also can serve alongwith rabdi

Work from Home during the COVID-19 Pandemic and the subsequent nationwide lockdown, gave me a chance to spend more time with my family and ofcourse helped me re-invent my cooking knowledge and try out more healthy yummy dishes for my family in the evenings and over the weekend; it saved my commuting time and energy, my day would start at 5am as usual, finish off all my daily household chores, then office work 8am to 5pm, from 5pm I could spend my time for my family trying our new dishes and eat them fresh hot with my family, I begin this Series Tasty Buds.. you may try out a few ones, most of them are simple, easy and quick to prepare, so read ,try our Tasty Buds !!!
